Ingredients:
- 5 cups day-old bread, torn into pieces
- 4 cups Holiday Nog (eggnog), divided
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- ⅓ cup cornstarch
- 2 teaspoons vanilla extract
- 1 cup pecan halves
- ¼ cup brown sugar
- 1 cup pecans, roughly chopped
- ¼ cup butter, melted
- Berries for serving (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with non-stick spray.
- Place the torn bread in the prepared baking dish. In a large saucepan, combine 2 cups of Holiday Nog, cinnamon, and salt. Heat over medium heat, stirring occasionally, until the mixture reaches a simmer.
- While the nog mixture simmers, whisk together the remaining 2 cups of cold Holiday Nog and cornstarch in a separate bowl until smooth. Once the warm nog mixture begins to simmer, slowly drizzle in the cold nog mixture, whisking constantly. Continue to simmer until the mixture thickens.
